Easy Cracked Potato Recipe...

Hi everyone! I love quick and easy side dishes, especially in the summer. When we cook on the grill in the summer, these Cracked Potatoes are a perfect addition.

I used small red new potatoes. Just boil them in water until fork tender.

Drain the water and add butter, salt, pepper and garlic powder to taste. You can use any seasoning that you like though.

Toss in the pan with the butter and seasonings.

While they are still hot, place on a baking sheet.

With a fork, gently flatten them to "crack" the potato.

Place in the oven just to crisp up the tops. They are already cooked and hot, so you just want then to get a little crunchy on the edges.

I used the broiler mode on my oven to crisp them up. Only took a few minutes with a hot broiler.

Top with parsley or even some Parmesan cheese if you 'd like.

You can really mix things up with the flavors on these potatoes.

They are so yummy...I hope you like them too!!

  11. Those look like they're similar to The Pioneer Woman's 'hot crash potatoes'. She says her recipe comes from Australia. I tried em once and they were OK. I'm quite sure I did something wrong..LOL!

  12. Ok that is too funny. I made these last night! I had also made the pioneer woman version a couple of years ago, last night I made some from the The Sandwich King TV show. His called for drizzling with olive oil and pepper and then parmesan cheese and baking for 25 min @ 425 so they were crispy like tator tots. Mine didn't come out quite right, I am thinking the broiler would have made them more crispy for the last part of the cooking process. I have left overs so I may try heating then hitting them with the broiler so they will have more flavor.

  14. That looks good and similar to what I do. We put ours in the microwave to soften them, then I cut in half and coat with butter, garlic, cilantro and lemon juice, then bake or broil them. Great for a summer or winter dish.

  24. I made a simpler recipe 2 weeks ago to try baby reds from my farmers market. Actually wrapped in foil,drizzled with EVOO and placed off the main heat of a charcoal grill.30 minutes later smashed and sprinkled with sour cream and parsley.New potatoes YUM there is nothing better. God how I love the simple life.
