Here's the solution...a Pumpkin Smoothie.
I've seen so many recipes for this on Pinterest, so I just had to make one. I'm really trying to eat healthier and this will definitely satisfy the need for a yummy treat, but in a "better for me" way.
You can research more recipes and different ingredients, but these are the things I had around the house. Add your favorite things to your smoothie.
My measurements are also more of a "let's just use one measuring cup to keep the mess down"
Pumpkin Smoothie Recipe
1 cup light vanilla soy milk
1/2 cup light or fat free french vanilla yogurt
1/2 cup canned pumpkin
a capful of vanilla extract
one splenda packet (if needed for sweetness)
sprinkle of cinnamon, nutmeg or pumpkin pie spice to blend in the drink and to sprinkle on top
Blend all ingredients together and add a dash of nutmeg on top.
Enjoy!!

About the spices I used...the first time I made this I used a dash of cinnamon and a dash of nutmeg.
Then I tried just a dash of pumpkin pie spice. Both are great though!
This little grater is for fresh nutmeg. I bought this years ago, because it was just too cute. Really, how often do I use fresh nutmeg? Not very often...until now!!
The grater has a little compartment on top for the whole nutmeg. I finally use this all the time now!!

I love pumpkin flavored treats and drinks. Have you ever had Silk's Pumpkin Spice? They carry it around the holidays. It tastes like pumpkin egg nog!
ReplyDeleteSounds yummy!! I could eat Pumpkin year round, too. What is also good is putting it in pancake mix and making pumpkin pancakes, topped with syrup or chocolate icing for a real treat!!

I too am a pumpkin fanatic! Every year, during the first week of September, I start making pumpkin bread. Earlier and earlier every year, I start making pumpkin pies. They are a favorite in this household! I will have to try this smoothie! I love eggnog as well...got any low cal, healthier version recipes for eggnog fans?

ReplyDeleteIn Aus we use pumpkin as a vegetable and there is nothing nicer than roast pumpkin with roast carrot and potatoes to make any joint of meat taste extra special
