Shrimp Dip Recipe...Great Holiday Appetizer

Hi everyone...hope you're all having a great day! I know the holidays are still a little bit away, but it never hurts to start looking for new recipes for Thanksgiving or Christmas. We all have our family favorites that we always make, but it's nice to add something new once in a while.

When you are trying a new recipe, there are 2 reasons to make a tester... 1) because you want to make sure it really is tasty and 2) you get to eat the tester!!

Here is a yummy appetizer that I serve every holiday...

Shrimp Dip

My mom made this recipe all the time. It's a Shrimp Dip/Shrimp Mold. It contains an unflavored gelatin, so she always placed it in a mold and then turned out on a serving tray in fun shapes for the holidays. Personally, I just serve it in a pretty bowl...I still use the gelatin though, gives it a great texture.

Shrimp Dip Recipe

one - 8 ounce package cream cheese
3 tablespoons ketchup
one small onion, finely chopped
1/4 cup celery, finely chopped
1/4 cup green pepper, finely chopped
1 envelope Knox unflavored gelatin, added to 1/4 cup water. Mix and let stand until set
1 cup mayonnaise
1 tablespoon lemon juice
1 can tiny shrimp, drained

In a microwave safe bowl, microwave the cream cheese and ketchup for one minute. Whisk until blended. Add chopped onion, celery, green pepper, gelatin mixture, mayonnaise and lemon juice. Stir together. Fold in shrimp at the end, so it doesn't break apart too much.

Pour into serving dish and refrigerate until set...1-2 hours.

If you are serving it as a mold, pour mixture into a mold that has been coated with cooking spray. Refrigerate until set, then turn out onto serving platter.

Enjoy!

Here are a few pictures for quick reference...

Microwave cream cheese and ketchup for one minute.

Whisk together.

Add onions, celery, green peppers, mayonnaise, lemon juice and gelatin mixture...stir.

Fold in shrimp. Ignore that whisk in the picture...use a spoon, the shrimp will get caught in the whisk Lol

Ahh...there's the spoon!!

It really is delicious served with any type of cracker or veggies too!!

Want some?

Happy cooking,
~Karen~

  7. Sounds good and very similar to what I used to make. I have left out one ingredient after another from the recipe i used until now I make it with just the softened cream cheese, a little lemon juice, the shrimp and the liquid from the can. Love shrimp!

  8. Shrimp dip is a tradition in our home at Christmas and Thanksgiving (and whenever my son visits from Texas)! We make ours a little different, but will have to give this one a try sometime.
