Balsamic Roast Beef...Easy Crockpot Recipe

I wanted to share another yummy recipe with you...Balsamic Roast Beef for your crockpot. My biggest challenge in the kitchen is finding different recipes that everyone will like and that are easy to prepare. Not to mention the challenge of the price of meat these days. Seems like we eat a lot of chicken in a thousand different ways.

I haven't bought a roast beef in forever for 2 reasons...one is price and the other is they usually come out too dry. I hate spending money on expensive beef and then have it come dry and grainy.

Well, I came up with a new family favorite. It's a sweeter recipe, just to let you know.

The roast cooks up whole, but shred apart easily. So delicious!!

Here is the recipe...You can change it up as you'd like for a different taste.

Crockpot Balsamic Roast Beef


3-4 pound chuck roast
2 cups beef broth
1/2 cup brown sugar
1/4 cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 teaspoon salt
3 teaspoons crushed garlic
red pepper flakes to taste ( I used about 1/4 teaspoon)
2-3 onions, cut in quarters
2-3 tablespoons olive oil for browning the meat

Heat olive oil in a skillet and brown the roast for 2-3 minutes on each side. While that's browning, place all the other ingredients (except the onions) in sauce pan to blend to melt the brown sugar.

Place quartered onions on the bottom of the crockpot as a base for the beef. Then place the browned roast on top of the onions. Pour the balsamic mixture over the beef. Cover and cook in crockpot for 6-8 hours on low.

I did check mine between 4-5 hours and it pulled apart and was super tender. I'm not sure what it would have been like if I cooked it longer and I was afraid to try. I can tell by the smell in the kitchen when something is done.

My crockpot might cook hotter too, so check your beef as you go after 4-5 hours.

I shredded the beef and removed all the bits of fat, then poured on some of the sauce. I also took a little of the sauce and thickened it with corn starch.

We served it over rice, but mashed potatoes would be great or it would be yummy in a sandwich too.

  7. This sounds really good! I haven't bought a roast in years; it's only the 2 of us now. If this will freeze well for a 2nd meal, I'll give it a try.

  12. Yummy, sounds good to me! I'm with you, though. When the heck did chuck roast get so dang expensive?! I hardly ever buy them anymore, for that reason. But I have one in the freezer now, I could bust this out this week. Yum, yum.

  13. This is a GREAT recipe. Very similar to one that I already make but a twist on the flavor. I'll give this a try for sure.

    My challenge is finding "tasty" crock-pot recipes that can cook for 8 - 10 hours :(

  15. I haven't had roast beef in ages...it's more of a winter food than summer....but this looks so good / the next time shoulder or english cut goes on sale I think I'll use your balsamic recipe !:)

  16. Cook your beef roasts in a pressure cooker and they will be fork tender/moist every time.
